Cyril's chicken stir-fry

"Not only is Cyril Rioli a wiz on the field, he's a wiz in the kitchen!" - Brad Sewell

 Ingredients (serves four):

  • Tablespoon of peanut oil (for frying)
  • Two chicken breasts, cubed
  • One clove of garlic, finely chopped
  • One tablespoon fresh ginger, finely chopped
  • One tablespoons sweet chilli sauce
  • One small red chilli, finely chopped
  • One carrot, cut length ways into thin strips
  • Half red capsicum, cut length ways into strips
  • Half green capsicum, cut length ways into strips
  • Large handful of snow peas, ends removed
  • Three tablespoons oyster sauce
  • Half a cup of water
  • Rice or noodles for four

Method:

  1. Using a hot pan or wok, fry the chicken in a tablespoon of oil until just golden.
  2. Add to the pan garlic, ginger, sweet chilli sauce.
  3. Add the vegetables to the pan along with oyster sauce and water.
  4. Stir fry the veggies until just tender.
  5. Serve with steamed rice or noodles - delicious!
